The Valéry family has been producing fine Languedoc wines since 1950 for three generations. Their vineyards cover an area of 110 acres in the South of France near Béziers in Languedoc. Located at the gates to the villages of Sauvian and Sérignan, the property is very close to the Mediterranean Sea, the famous sprays of which are integral to the terroir of the valley.
The family produces a few wine ranges, two of which are sent here to the USA. The Domaine des Deux Ruisseaux range is a Vin de Pays d’Oc Appellation and Château Le Thou is classified under the Languedoc AOC.
The Valéry Family is committed to protecting the environment through several initiatives and actions that reduce the carbon footprint of its production. The founder, Gilbert Valéry, planted 150 acres of forest within the Haut Languedoc Regional Natural Park which offsets approximately 350 tonnes of CO2 per year. In 2019, the family began the conversion process to certified organic farming and winemaking.

BLEND/COLOR: 60% Roussanne and 40% Marsanne, Nice yellow color with golden green tints.
PALATE/BOUQUET: Complex with citrus and white flower notes. Great freshness and balance with a lingering finish. Ideal with crustaceans, gambas, cooked fish meals and mature Mediterranean cheese.
VINTAGE NOTES: Night harvest with plot selection and destemming. Soft pressing and fermentation for 25 days.

BLEND/COLOR: 80% Grenache and 20% Syrah, Very pale pink with beautiful brightness.
PALATE/BOUQUET: Fresh and complex with red berries demonstrating persistent notes. Ideal for happy hour or with a summertime meal of exotic or southern cooking.
VINTAGE NOTES: Night harvest with plot selection. 100% destemming and cooling. Fermentation for 20 days with three pump-overs a day.

VINTAGE NOTES: Hand harvested with plot selection and destemming. Alcoholic fermentation between 26-28 C for 20 days with soft pressing and separation of different qualities of pressed wines. Aged in Bordeaux barrels for 12 months.

VINTAGE NOTES: Inerting with carbon dioxide and cooling before soft pneumatic pressing. Cold settling for 36 hours.
